Our Family’s Traditional Korean recipe. Crisp, with bursts of bright flavors. It is the epitome of how kimchi should be. We pack with apples instead of sugar, and kombu for depth of flavor in our kimchi.
Ingredients: Nappa cabbage, Korean radish, apple, onion, Korean chili pepper, chives, garlic, shrimp paste, fish sauce, ginger, rice flour, kombu broth, water, salt.
Allergen: Shellfish
VEGAN KIMCHI
Effervescent and light, this Vegan version is tailored with the well-rounded umami of additional kombu. Every bit as good as the Traditional Recipe but made for vegan customers or those with shellfish allergies.
Ingredients: Nappa cabbage, Korean radish, apple, onion, Korean chili pepper, chives, garlic, shrimp paste, fish sauce, ginger, rice flour, kombu broth, water, salt.
FUNKY KIMCHI
Funky is our traditional recipe, just fermented longer for a more integrated, mouth watering, “funky” flavor. Great for cooking or eating right out of the jar! It is the founders’ all-time favorite. *Currently only available at the farmer’s market.

OUR STORY
Our story begins with the lady in this picture. She is the mother of the founder of Kimchi Rók, wearing her traditional wedding costume, Han-bok (한복). This young lady became the foundation of family, providing a full dining table with banchan (반찬; side dishes), entrees, and kimchi almost every meal for several decades of inspiration and support. We drew upon the depth of her love when we made our first batch of kimchi in 2017, based on her recipe. The uncompromising process, and an intention to offer her love through time-intensive preparation, became the key ingredient to our method.
We wanted to record (Rók; 록) her legacy and the tradition of her lineage. We are committed to providing quality Korean food that gives our customers a wholesome, healthy feeling. By sharing the family recipe, with love, from the Seoul of South Korea, to Austin, the Seoul of Texas we strive to inspire.

PARTNERS
We are honored to partner with the staff and students of the Clifton Career Development School of AISD to help create some of our products. We offer internships for students to gain job training and introduce them to Korean cuisine. We have been perfecting recipes based on the founder’s family recipe to produce mandoo (만두; dumplings), kimchi fried rice, kimchi stew, and many more. Our collaborative offerings are available only at farmer’s markets. A portion of these sales will be donated to school development, and we look forward to working with students as future employees.
